Chicken Caprese Pasta Salad Bowls

Pasta salad is a classic summer side dish, but adding protein (leftover grilled chicken is perfect here) and extra greens makes it a super-satisfying lunch. We use baby spinach, but arugula or baby kale works too. Top with a bright and tangy basil vinaigrette just before serving. The great news is that these easy meal-prep lunches take just 20 minutes to prepare–that’s 4 days of lunches in less than 30 minutes.

  • Bring a large pot of water to a boil. Cook rotini according to package directions. Drain and rinse under cold running water, then drain again and set aside.

  • Divide spinach among 4 single-serving lidded containers. Top each with 1 cup of the cooked pasta, 1/2 cup tomatoes, 1/2 cup chicken and one-fourth of the mozzarella balls.

  • Divide vinaigrette among 4 small lidded containers and refrigerate.

  • Seal the salad containers and refrigerate for up to 4 days. Dress with the vinaigrette just before serving.

    Vinaigrette Directions:

    Combine shallot, basil, oil, vinegar, honey (or agave), mustard, pepper and salt in a blender. Puree until smooth.

Finding Rest During the Busyness!

The holiday’s are here and along with them comes the hustle and bustle we add to our days.

Many times we forget to pause and take in what the Lord has for us all in the name of our task lists.

Life can be filled with busyness and uncertainty which can lead us into a place of stress and being nervous. And in some cases even lead us into illness.

As women we tend to want to know all the plans, the details and have a plan B for the just in case. Instead of allowing God to take the lead we are jumping out front and in many case tripping over our own feet!

green pastures. He leads me beside quiet waters. He refreshed my soul.”

God calls us to leave the details up to Him and rest in Him.

Do you feel guilty if you rest?

Are you a stubborn sheep not willing to rest in Him?

The Lord knows us and desires that we lay down in His green pastures and refresh our souls by the quiet waters, He wants us to know peace that only comes through Him and Him alone.

Rest is really not an option in our walk as a Woman of God, it is a Spiritual discipline we need to help us create a habit in our life. We need to understand that busyness is NOT productive! Busyness will actually break us down. There is no need to fill every waking moment with something to do, maybe it is time to evaluate your day and see if you are filling it with busyness or productivity.

What are your daily priorities?

Are you exhausted at the end of each day because you have been trying to do it on your own? You are just too busy to seek God to guide you through your day. Time for a change in mindset! 

If you make God, your time with the Lord a priority you will find that the day is productive, you can manage the day and you are not exhausted at the end of each day.

It is time to press in on God and THRIVE daily!

What is the Lord showing you today that needs to shift?
